I went ahead and purchased 50 pounds of Roma Tomatoes from Bountiful Baskets. Talk about ambitious. I love to can, but then I also hate to can. Fifty pounds of tomatoes.....
I would have been fine getting 25 pounds. When I can, there comes a point where I just want it to end. But then when I see how much more I have still to can, you can't not can it. It would goto waste. So my frugal instincts kick in and I am forced to stick it out and, "Get the dang thing done. Jay Hepworth" It took me a couple of days, but I got all 50 pounds of those tomatoes done. Not only did I get a bunch of crushed tomatoes, but I also made some salsa; a first for me.
Right when I was about finished with them, I got a half bushel of peaches to add to the mix. I ended up making 7 quarts of peach pie filling {mmmm...... my mouth is already salivating} and then I cut up and froze the rest of them for smoothies.
I wish I had apples for apple pie filling and dehydrated apples. Dried apples are my favorite! I may just have to make a trip to Winco and buy some dried apples in bulk!
