A quote, Dooms Day, and a Recipe.

"Most of the things we worry about NEVER happen."

Today is April 15. Tax Day. Dooms Day. The day some of you rejoice at the fattening of your wallets. It is also the day where some of us wince at the mere sight of the envelope which holds "the check" as it slides down the mail chute at the post office. The only good thing about Dooms Day is that it is on a Friday. And that is a good thing.

White Chocolate Covered Popcorn

Pop 2 batches of popcorn with your popcorn popper. Mix in some small marshmallows and pretzel sticks. Melt some white chocolate and drizzle over popcorn, marshmallows and pretzels. Stir and eat. But don't eat yourself sick.

*I found that 1/2 package of white almond bark melted in the microwave did the trick. I also recommend leaving some of the popcorn uncoated. The last time I made this I made sure everything was coated with chocolate and it was really good, but it was really rich. This would be really good with m & m 's, coconut, nuts, etc. YUM.

I LOVE white chocolate popcorn. While I was taking a spinning class at the gym, the teacher handed out bags on Halloween. I'm pretty sure she did it just to keep us coming to class. But it was so yummy regardless.
